The use of Collections is optional and won't impact your creative results.
But, using Collections might give you several benefits:
You can put all objects from the same type in a single Collection.
For instance, all furniture objects from a scene in a Collection
called furniture. That way, you can easily select all objects from a
Collection using SHIFT+G.
At the Collections controls, you can hide objects from a Collection
from the 3D Viewport by clicking on the small eye icon. You can
hide individual objects or the entire Collection.
If you click on the eye icon while holding the CTRL key, you hide
all other Collections but the one you are clicking. Click again to
unhide.
A Collection appears in the list of objects you can use to append
from external files. Using the Append or Link options from the File
menu will allow you to get all the contents of one or multiple
Collections.
